    2 Zucchini Grated and squeezed ( I use potato ricer to squeeze out all the liquid)
    1 Potato grated
    1 Egg beaten
    2 tbls olive oil
    6 scallions chopped in food processor
    1 cup good romano or parm grated cheese (not green box)
    1 tbls parsley
    1 tbls thyme
    1 tsp salt
    1/8 tsp pepper


Grate the zucchini and potato, drain in a potato ricer and place in a bowl. Must be very dry Mix. Make a well in the center for the egg and beat the egg. Add the scallions, flour and herbs and mix together. Working in batches saute 1/3 cup batches, flatten into patties as you go. Flip after about 3 minutes it should be brown by then. Do 2 minutes on the other side. Drain on paper towels and salt and pepper to taste at the table. This makes about 8 fritters. Serving size is based on one fritter if you can only eat one!
