Introduction

Okay, not totally lo-calorie, but totally delicious over noodles, which aren't even calculated here, darn it! Okay, not totally lo-calorie, but totally delicious over noodles, which aren't even calculated here, darn it!
Number of Servings: 8

Ingredients

    2 lb. ground round
    1/2 c. bread crumbs
    1 egg
    1 t. salt
    pepper to taste
    1/2 c. tomato sauce
    2 T. butter
    2 T. vegetable oil
    8 c. sliced zucchini
    3 large onions, sliced
    2 cans beef consomme

Directions

Take ground round, bread crumbs, salt, pepper, egg and tomato sauce - form into small meatballs and bake for 25-30 minutes in a 375 oven til done. Remove from pan and put into been consomme. Simmer on stovetop just to keep warm. Melt the butter and oil and add the zucchini and onion and cook, stirring often, until they are browned and carmelized. It takes awhile. Then add the consomme and meatballs and bring to a boil and let it cook down a bit til it starts to thicken. Put over noodles.
