Introduction

Blackened chicken with Low Calorie Mayonnaise, reduced fat sour cream, raisins, pecans and honey.

Serve on whole wheat pita bread (cut in half to form pockets) or other low calorie bread.

Ingredients

    4 Tyson chicken breast tenderloins
    1/4 cup kraft mayonnaise with olive oil
    1/4 cup reduced fat sour cream
    blackened seasoning
    1/8 teaspoon celery salt
    1 tbsp sugar free honey (or 1 tbsp of regular honey for 10 more calories)
    2 tbsp of chopped pecans
    1/4 cup raisins
    1 tsp salt

Directions

1. Coat chicken in blackened seasoning and grill, flipping once, until done and chicken easily pulls apart with a fork. (I used a foreman grill and this took about 8-10 mins)
2. In a medium sized bowl add all ingredients but chicken to create the dressing.
3. Use a fork to lightly shred chicken.
4.Add chicken to bowl with the dressing and turn to coat.

Serve Immediately or refrigerate in an airtight container for up to 2 days.
