    1/2 cup whole wheat pastry flour
    1/2 cup unbleached flour
    1/2 cup granulated sugar
    1/2 tsp salt
    2 1/2 tsp baking powder
    1/4 tsp baking soda
    3/4 cup regular dry oatmeal
    1 egg
    3 tbsp light olive oil
    1/2 cup non fat milk
    2 well ripe medium to large bananas mashed


Preheat oven to 375 degrees.
Whisk together first six ingredients.
Add oatmeal.
Stir together egg, milk and oil. Add to dry ingredients.
Stir in mashed bananas.
Fill 12 paper lined muffin cups with batter.
Bake at 375 until toothpick shows done, 20 minutes in my oven.
Cool on rack. Enjoy.
One muffin is a serving.
