Ingredients

    Flour 2-cup
    baking powder-1teas.
    baking soda-1.5 teas.
    .25 salt
    mashed banana 1c. or 2 medium
    maple syrup, honey, or barley malt .5 c.
    .5 cup flaxseed
    16 teaspoons extra virgin olive oil
    1 teas. vanilla extract
    1/4 teas. lemon extract or lemon juice
    .5 c. water
    .5 c. chopped apples

Directions

Heat oven to 375 degrees. Combine ingredients. Mix until well blended, but not smooth. Spoon batter into greased tins. Until 2/3 full. Bake for 20 minutes. Makes around 12-14 medium sized muffins.
