Introduction

for roasted garlic: put a couple of heads of unpeeled cloves in a Pam-sprayed skillet with a glug of white wine (or broth or water), salt & pepper, then put a lid on and let them braise over low heat til soft. Squeeze them out of their peels.

if you love the cheesy flavor of nutritional yeast, you can use more, the original poster uses 4 Tbsp

You can easily double this recipe. Use as a dip for raw vegetables or spread it on crusty bread or (the best!!!) dollop it on roasted baby red bliss potatoes.

Ingredients

    1 (12.3 oz) box silken tofu
    1/4 c roasted garlic
    2 Tbsp light miso
    2 Tbsp capers
    2 lemons, juiced
    4 tsp nutritional yeast
    2 Tbsp water

Directions

Combine all ingredients in blender until smooth and creamy. If it's too thick, add just enough water to get the mixture moving through the blades. This is not supposed to be runny, but more like mayonnaise.

Let it stand (refrigerated) for a couple of hours to let the flavors blend.
