    4 mushrooms, finely diced
    1 clove garlic, minced
    2 tbsp onion, minced
    1 tbsp lemon juice
    2 tbsp grated parmesan cheese
    2 large tomatoes, halved
    1 tbsp unsalted butter, quartered
    pepper to taste


Serves 4

Combine mushrooms, garlic, onion,lemon juice, and parmesan cheese in a mixing bowl. Half the tomatoes and scoop out the seeds. Place tomatoes on preheated plank and stuff with the mixture. Dot with butter and season with pepper. Roast for 20 minutes at 350 until the edges of the tomatoes are golden brown.
