    4 medium yukon gold potatoes, cubed
    3 tbsp olive oil
    Herbs for seasoning


Wash potatoes and cube them with skins on.
Place them in baking dish making sure there is enough room for a single layer. Pour olive oil over them and toss them to evenly coat them with the oil. Add the herbs. Bake in pre-heated 400 oven for aprox. 30 minutes. Make sure to turn them in the middle of baking so that the sides get more evenly browned if you wanted to. This feeds 4.
