Ingredients

    2 cups Fresh Mulberries
    1 C. minus 1 Tbsp Hodgson Whole Wheat Graham Flour
    3/4 C Bob's Red Mill Whole Grain Oat Flour
    1 1/2 tsp baking powder
    1/2 tsp Sea Salt
    1/2 tsp Cinnamon
    3/4 C. packed brown sugar
    2 egg whites
    3/4 C Oikos Fat Free Plain Greek Yogurt
    1/2 C. + 1 Tbsp Unsweetened Applesauce
    2 Tbsp. Hodgson Mill Whole Wheat Graham Flour

Directions

Preheat oven to 375F.. Grease muffin pan with no stick cooking spray.. combine dry ingredients in bowl #1... Mix Egg Whites, Yogurt, and Applesauce in bowl #2 and combine with bowl #1... In bowl #3 toss mulberries in 2 Tbsp Graham Flour(this will keep the berries from settling at the bottom of the batter).. Fold mulberries into mix. Pour into prepared muffin tin, bake 20-25 minutes.. Yeild: 12 Muffins
