Introduction

Ingredients

    1 lb lean ground beef
    1 medium onion, chopped
    1 can (10 oz) enchilada sauce, divided
    1 jar (16 oz) salsa
    Olive oil
    8 flour tortillas (8-inch)
    1 C shredded cheddar cheese

Directions

Brown beef and onion over medium heat until meat is no longer pink; drain. Stir in 1/2 can of enchilada sauce and 1/2 Cup salsa; set aside. In a skillet, heat 1/4 inch of oil. Dip each tortilla in hot oil for 3 seconds on each side or until just limp; drain on paper towels. Top each tortilla with 1/4 cup of beef mixture. Roll up and place seam side down in a 13x9x2-inch baking dish. Drizzle with remaining enchilada sauce and salsa. Sprinkle with cheese. Bake uncovered at 350 for 20-25 minutes or until bubbly.
