Introduction

Number of Servings: 6

Ingredients

    12 chicken thighs (boneless, skinless);
    1 tsp garlic powder;
    1 tsp pepper (preferably fresh ground 4-colour) ;
    1 1/2 cup sliced onions;
    1 cup sweet red peppers, sliced;
    1 cup sweet green peppers;
    1 can whole tomatoes, no salt added (1 can=28 oz);
    crushed red pepper flakes, 1 tsp or to taste

Directions

Bake chicken with garlic and ground pepper 375 till cooked, about 30 minutes.
Add other ingredients and continue baking for another 30-60 minutes.
Good served over brown rice, or with pasta or potatoes.
Season with more crushed peppers if you wish.
Divide into 6, 2-thigh servings.
