Introduction

This is a Summer favorite. It's soo refreshing. I like to serve it over a bed of lettuce. It's great as a side but also makes a satisfying entree. A serving is a nice cupful but for a potluck, a serving would be about 1/2 cup(so you'll get about 20 servings) This is a Summer favorite. It's soo refreshing. Ingredients

    Ingredients:
    Beans, red kidney, 15 oz can -rinsed and drained
    Beans, black, 15 oz can- rinsed and drained
    Beans, white, 15 oz can -rinsed and drained
    Yellow Sweet Corn, 15 oz can -drained only
    Onions, 1 medium sweet onion(vidalia, spanish) chopped
    1 Peppers, sweet, red bell, chopped
    1 Green Peppers (bell peppers) chopped
    Cilantro, raw, 4 tbsp chopped
    Parsley, 4 tbsp chopped
    Mint Leaves, about 5-7 leaves chopped
    Juice of 1 Lime
    Kraft Zesty Italian Salad Dressing, 4 tbsp
    Pepper, black 1/4 tsp black pepper
    Chili powder 1/2 tsp (optional)

Directions

Combine rinsed and drained beans and drained corn in a large bowl. Add chopped vegetables and herbs. Add salad dressing and lime juice and black pepper. Stir to combine. Put in serving bowl and sprinkle chili powder, if using, over the top.
