This is our yummy take on a Buffalo chicken & taco salad combined! This is our yummy take on a Buffalo chicken & taco salad combined!
Number of Servings: 6


    Iceberg Lettuce 3 cup, shredded or chopped
    Lettuce, red leaf 1 cup shredded
    Tomatoes, 1 cup, chopped or grape tomatoes
    Red onions, 1 cup, chopped
    Chicken Breast, no skin, 4 breast, bone and skin removed
    1 can black beans - 15.5 oz.
    *Tortilla Chips - Archer Farms Blue Corn Tortilla Chips (15 chips),
    *Louisiana Hot Sauce, 5 tsp - to taste
    Olives, black, canned (small-extra large), 6 tbsp (remove)


Chop chicken breasts into bite size pieces and brown in skillet with Louisiana Hot Sauce (to taste). Remove and let cool.
Chop up your lettuces (can use any variety you desire), black olives, onions, tomatoes - combine in a large salad bowl.
Drain & rinse your black beans (helps remove some sodium) and add to salad mixture, add the chicken.
Serve with tortilla chips and whatever salad dressing you desire.

This is our family favorite!
