    * Eggplant, fresh, 1 cup, cubes (remove)
    * Onions, raw, 2 small (remove)
    * Tomatoes, red, ripe, raw, year round average, 2 small whole (2-2/5" dia) (remove)
    * Zucchini, 2 cup, sliced (remove)
    * Garlic, 4 cloves (remove)
    * Mushrooms, fresh, 4 small (remove)
    * Olive oil Vigo, 0.25 tbsp (remove)
    Preheat grill for 5 minutes adding olive oil if desired. Add 6 slices of eggplant & garlic to grill for 3 minutes. Add zucchini, onion & mushrooms and grill 3 to 5 minutes. Remove onion, zucchini & eggplant to a plate & set aside. Add tomatoes to onion & garlic for 1 minute. Remove & serve over eggplant, zucchini & mushrooms. I also added yellow squash slices (half of small one). Use with pasta, meat/fish or stuff into a pita.


Makes 3 to 4 servings.
