Introduction

Not low cal, but very interesting and tasty soup! Be sure to use Green leaf lettuce and NO other kind. Use vinegar to taste - can be added later as well. Number of Servings: 20

Ingredients

    Bacon, 4 lbs.
    *Vinegar - 1 Cup (add to taste)
    *Lettuce - Green Leaf - 15 Lbs.
    *POTATO, Boiled 15 lbs.
    *Fresh: Green Onions, 6 bunches
    Water, tap, 10-20 cup or what ever it takes to boil the potatoes - be sure to reserve the water as the base of the soup broth.

Directions

Peel and Boil the potatoes - drain and reserve the boiled water to add back as the stock. Cook bacon and add the vinegar to the bacon grease after it has sizzled down. When the potatoes are ready they can be mashed in a large pot, then add the remaining ingredients (chop the onions) with the bacon and grease, potato water, add the lettuce last. Simmer for 60 mins. More vinegar can be added to the soup to taste.
