Introduction

It only takes 30 minutes but the lentils are fully cooked.

Number of Servings: 10

Ingredients

    1 pound dried lentils
    3 carrots (diced)
    3 stalks of celery (chopped)
    1 medium onion (finely)
    28 ounces of diced tomato (I use 2 smaller cans w/no salt added)
    "Better than Bouillon" 2 heaping soup spoons
    6 cups of water

Directions

Put water in 5 qt soup pot
put everything else in pot
boil and cook at medium rolling boil for 30 minutes
Can add in new or red potatoes, yams, sausage, etc.
Doesn't need to be watched carefully
Don't be afraid to add more water
Don't overcook!
