    2 C water
    1 C long grain brown rice
    2 t chicken bouillon
    1/2 t salt
    1/2 t dry mustard
    1/2 t pepper
    1/2 C chopped onion
    5 egg whites
    2 C non-fat milk
    2 C shredded non-fat mozzarella cheese
    2 T reduced fat parmesan cheese
    1 C chopped green bell pepper
    4 cloves garlic chopped
    1 C sliced mushrooms
    1/4 t tabasco pepper sauce


Heat water, rice, salt, mustard, pepper and pepper sauce to boiling in saucepan, stirring once or twice; reduce heat. Cover and simmer 14 minutes. Do not lift cover or stir. Remove from heat. Fluff lightly with a fork. Cover and let steam 5-10 minutes. Stir in onion and bell pepper.

Heat oven to 325. Grease rectangular baking dish. Pour rice mixture into baking dish. Mix egg whites and milk. Pour over rice mixture. Sprinkle with cheese. Bake uncovered 40-45 minutes or until golden brown and set.

Let stand 10 minutes before serving.
