    1 c. quinoa
    6 sweet bell peppers
    1 c. corn
    1 jar salsa (nutrition for Pace- medium)
    1 tsp. ground cumin
    1 tsp. onion powder
    1 c. mexican blend cheese


Prepare quinoa according to package. Dice one bell pepper, and core the other 5 (they will be stuffed). Mix quinoa, diced pepper, corn, salsa, cumin and onion powder. Fill peppers. Bake for 15 minutes at 350 degrees. Top with Mexican blend cheese and bake until cheese is bubbly. Enjoy!
