    2 cups raw quinoa rinsed and cooked
    2 lbs cooked shrimp, tails removed from half
    1 sweet vidalia or red onion, diced
    1 28 oz (796 ml) can diced tomatoes with juice
    3 TBSP capers, minced
    3 TBSP fresh dill chopped
    3 TBS fresh parsley chopped
    1/4 cup fresh lemon juice and zest from lemon
    1/2 tsp salt


Cook quinoa. Mix tomates and mayonaise. Add onion, capers, dill, parsley lemon juice and zest to tomato mix. Stir in cooked quinoa. This will be a bit soupy, but we liked it this way. You could drain the tomatoes, and add however much liquid you prefer. In season, you could also use fresh chopped tomatoes in place of canned. This would lower your sodium content. Stir in 1 lb of shrimp without tails. Use other pound with tails left on to decorate the bowl.
Let set for an hour or so.
