Number of Servings: 6

Ingredients

    1 Pablano or Jalapeno Chile, coarsely chopped (remove the seeds and membranes if you want to minimize the heat)
    2-4 green onions, coarsely chopped
    1 clove garlic, peeled, and cut into a few pieces
    1 Tbsp of fresh cilantro (we buy a bunch of fresh, and freeze it and break off pieces as we use them)
    2 cans diced tomatoes, drained and rinsed
    juice from 1 lime
    Salt to taste

    Optional
    1/2 C frozen corn
    1/2 C black beans

Directions

Place the chile, green onions, garlic and cilantro in a food processor. Pulse 4 or 5 times for 1 second each. Add the tomatoes (make sure they are well drained; I put them in a mesh strainer for 3 minutes, and then press the last of the liquid out of them) and pulse 2 or 3 times more. Transfer to a bowl, add lime juice and stir by hand. Add corn and/or beans if desired.
