Introduction

A favorite in my house - easy, yummy, great as leftovers. This recipe is also easy to modify to your taste - you pick your favorite veggies, cheese, leave out the cheese, substitute brown rice, turkey for chicken ... whatever! This recipe is also easy to modify to your taste - you pick your favorite veggies, cheese, leave out the cheese, substitute brown rice, turkey for chicken ... whatever!

Ingredients

    3 cups cooked rice
    1 can cream of mushroom soup
    10-oz can of white meat chicken
    1/3 C milk
    1 C shredded cheddar cheese
    medium onion, diced and sauteed
    1/2 C frozen peas
    French fried onions

Directions

Cook 1 C rice according to package directions (will yield 3 C cooked). While rice is cooking, chop onion and sautee until translucent. In a casserole dish, combine the soup, chicken, milk, onion, peas and half the cheese. Add the rice and stir to mix. Top with the remaining cheese and sprinkle with french friend onions. Bake at 350 for 30 minutes. Makes approx. six servings.
