    1-3/4 cups Pamela's Baking & Pancake Mix
    1/4 cup melted butter, or oil (earth balance vegan butter)
    1/2 cup milk (soy silk vanilla light)
    1/2 cup sugar
    1 egg
    1 teaspoon vanilla
    3/4 to 1 cup blueberries


Mix all ingredients together and spoon 2/3 full into greased muffin pan (or use paper muffin cups). Bake in preheated 350 oven for approximately 25 minutes.
