Ingredients

    Olive Oil, 3 tbsp
    Green Peppers, 1 cup strips
    Onions, raw, 1 small sliced
    Chili powder, .5 tsp
    *Cumin, .5 tsp
    Lime Juice, 1 tsp
    Salt, .5 tsp
    Eggs, beaten, 8 large
    Cheddar Cheese, 6 oz
    Chicken Breast, no skin, .5 breast

Directions

1. Heat oil in a large, heavy, oven-proof skillet, and saute green pepper, onion, and chicken until the chicken has turned white and is done through. Stir in the chili powder, cumin, lime juice, and salt.

2. Spread the fajita mixture in an even layer in the bottom of the skillet, and pout the beaten eggs over it.

3. Turn the burner to low and cover the skillet. Let the frittata cook until the eggs are mostly set, but still soft on top (7-10 minutes).

4. Scatter teh cheese evenly over the top and slide the skillet under the broiler, about 4 inches from the heat, for 2-3 minutes or until the eggs are set and the cheese is just turning golden.

5. Cut into wedges, top each serving with a tablespoon of salsa and/or sour cream if desired.
