    Roasting Chicken, light meat, 1 cup, chopped or diced, leftover
    Grapes, 0.75 cup
    Onions, raw, 2 tbsp chopped
    Pecans, 1 oz (20 halves)
    *Alessi White Balsamic Fig Infused Vinegar, 1 tbsp
    Nonfat greek yogurt, 2 tbsp.
    Mayonnaise, regular (mayo), 2 tbsp
    *Grey Poupon Dijon Mustard, 1 tsp


Makes 3 servings

Chop pecans and onions. Slice grapes in half. Combine chicken, greek yogurt, mayonnaise, vinegar, and mustard. Stir in onions, pecans, and grapes. Chill, then stir again and serve with lettuce, crackers, or a slice of bread. Great lunch item.
