Ingredients

    3 cucumbers, peeled and coursely chopped
    1 clove garlic
    2 cups broth (chix or veg)
    2 cups sour cream (lite preferred)
    3 T white vinegar
    1 tsp course salt
    .5 tsp pepper (white preferred for presentation)
    chopped tomatoes
    snipped fresh chives

Directions

Puree broth, garlic and cucumbers in food processor or blender. Mix together sour cream, vinegar, salt and pepper in a large bowl. Stir in cucumber puree. Chill for several hours. Serve chilled, topped with tomatoes and chives. Provides 5.5 - 1 cup servings.
