Introduction

This is a recipe taught to me by my mother-in-law. It is made similar to spanish rice with meat. This is a recipe taught to me by my mother-in-law. It is made similar to spanish rice with meat.
Number of Servings: 12

Ingredients

    about 1.5 pounds of 93% lean ground beef
    2 Tbsp of extra virgin olive oil
    1 pkg of Fideo (vermicelli), can be found in aisle with mexican foods
    1 clove fresh garlic or 1 tsp of minced garlic
    1 medium onion,chopped
    1 Tbsp ground cumin
    15 oz can diced tomatoes
    4 cups water

Directions

In large skillet, heat olive oil and fideo. Stir until fideo is slightly brown. Add ground beef and cook until almost done. Add chopped onion and garlic to meat, cooking until onion is translucent. Add diced tomatoes and water. Bring dish to a gentle boil and then let simmer until fideo is softened.

Serves 12 1-cup servings
