    1 tortilla
    1 egg
    2 egg whites
    8 cherry tomatoes, chopped
    1 cup diced up fresh spinace
    1 oz sharp or smoked cheddar
    splash water
    salt / pepper to taste


mix egg and egg whites with water, salt and pepper to taste (we use garlic salt). Begin cooking over low heat. After a few minutes add spinach and tomatoes. After a minute or two more add cheese, diced or shredded. Warm tortilla in separate pan last few minutes of cooking. Wrap and enjoy.
