Introduction

Number of Servings: 20

Ingredients

    3 Large eggs
    1 Cup flour (all purpose)
    1 Cup sugar (can use up to 1cup, but can do less if want to reduce sugar)

    2 large granny smith green apples

    1/4 teaspoon baking soda
    1/2 teaspoon (or 1/4 tablespoon) white vinegar
    (Can use 1/3 - 1/2 teaspoon of baking powder instead of baking soda and vinegar)

    1/3 teaspoon butter (to butter the pan)
    1/2 cup breadcrumbs (to prevent sticking to the pan)
    (Can use other crumbs like graham crackers)

Directions

Wipe the eggs and the sugar together until it is well mix and even a bit frothy.

Gradually add the flower until everything is mixed well.

Combine baking soda and vinegar (alternatively, use baking powder). Mix into the batter really well.

Dice 1.5 apples into small cubes. Add to batter and mix.

Melt the butter on the baking dish (covering all sides that will have the batter touching it.) Add breadcrumbs to the pan (this is not so much a crust as it is so that the cake can be removed easily when its done.)

Pour batter into baking dish.

Thinly slice remain half apple. Place on top of the batter (this is mostly for decoration.)

Preheat oven to 350F.

Cook time is 45-60 minutes, depending on the type of stove and size of dish. If the top is golden brown, test to see if the cake is done (I usually use a match to see if batter is sticking to it.)

Remove from oven, remove from baking pan. Let cool.
