Number of Servings: 8


    1 can Campbell's Cheddar Cheese Soup (or Nacho, if you can find it)
    2 cans Rotelle Diced Tomatoes and Chiles
    1 lb ground beef
    1 cup chopped onion
    1 cup chopped green pepper
    2.5 cups penne pasta
    Cheddar Cheese to top


In a hot skillet, cook onion and green pepper in a little oil, just until softened, approximately 3 minutes. Add ground beef and cook until brown.

In another pot, boil noodles according to package directions.

Mix all the ingredients and place in a baking dish. Bake at 350 for 30 minutes or until cheese on top is bubbly and brown.

Kids will LOVE this recipe!! If the Rotelle tomatoes are too spicy, feel free to substitute your favorite mild salsa, or even plain diced tomatoes. You can add anything to it you want, as well---corn, black beans, jalapenos--just remember to add that to the nutritional info. Enjoy!
