Ingredients

    Egg, fresh, 2 large
    *Flour, white, 1.75 cup
    Baking Powder, 2 tsp
    Baking Soda, .25 tsp
    Salt, .5 tsp
    Butter, salted, .33 cup
    *Splenda Sugar Blend for Baking, .66 cup
    Banana, fresh, 1 cup, mashed

Directions

Preheat oven to 350 degrees. Beat eggs weel in a small bowl. In a mdium-size bowl, sift togeher flour, baking powder, baking soda, and salt. In a large bowl, beat shortening until it is creamy. Add the sugar a bit at a time, and continue beating until the mixture is fluffy. Add the eggs to the mixture in the large bowl and beat well. Add some of the flour mixture to the large bowl and beat well. Then some of the mashed bananas and beat some more. Continue adding flou, then bananas, then flour, then bananas, until everything is mixed in. Pour mixture into a baking pan coated with nonsick spray. Bake for 70 minutes at 250 degrees. Flip you banana bread out of the pan and let it cool for a bit. Cut into 16 pieces.
