Introduction

Ingredients

    One medium Onion, chopped
    1 T. Olive oil
    3 serrano peppers or your choice peppers
    1 28 oz. can diced tomatoes
    1 12 oz. bag frozen corn kernels
    2 14 oz. cans black beans
    dash of liquid smoke
    garlic powder to taste~1/2 tsp
    chili powder to taste~2 tsp.
    cumin to taste ~1 tsp.
    lime wedges to squeeze
    1 bunch fresh cilantro, chopped

Directions

Sautee onion and pepper in the olive oil and dash of liquid smoke if desired. When soft, add tomatoes and spices and cook liquid down somewhat. Meanwhile, in separate, DRY pan, heated until hot, pour corn kernels in while frozen. Stir and allow to brown in the dry pan. Add the black beans and a bit of water if needed, stir and allow them to cook with tomatoes; taste and correct seasoning. Last, just before serving, stir in the corn. Squeeze lime wedges over and sprinkle with cliantro when serving.
