    3 egg whites
    175g caster sugar
    275mls double cream or similar substitute
    300g soft fruit (strawberries, raspberries & blueberries)


Pre-heat the oven to Gas Mark 2 / 150C / 300F.

Whisk the egg whites in a large bowl until they create soft peaks and you can turn the bowl upside down without them sliding out.

Whisk in the sugar, a little at a time, until the mixture is stiff and glossy.

Spoon the egg mixture onto a baking sheet lined with baking parchment, making an 8-inch / 20cm circle with raised edges and a depression in the middle.

Turn the oven down to Gas Mark 1 / 140C / 275F and bake the meringue for 1 hour up to 1.5 hours, checking after an hour to ensure the meringe doesn't burn.

When the meringue is fully cooked, turn off the oven and leave the meringue in the oven to cool down overnight, or for a minimum of 3 hours.

Carefully peel off the baking parchment and place the meringue on a serving plate.

Whip the cream until stiff and spread over the meringue. Decorate with the soft fruit and serve.
