    2 lbs Sweet Italian Sausage (Casings removed)
    4 Peppers Chopped (any Color, Mix colors for better flavor)
    2 Lg Onions Chopped
    2 Cloves Garlic, minced
    2 teaspoons Cumin
    4 cups Beef Broth
    2 Packages (6.2oz) Uncle Ben's Long Grain & Wild Rice mix


Heat oil in large skillet; add sausage. Break up with spoon while cooking. Cook until browned. about 5-10 minutes. Add garlic and cumin; cook about 30 seconds. Add onions and bell peppers. Saute mixture until onions are tender, about 10 minutes. Pour Mixture into slow cooker. Stir in beef broth and rice.

Cover and cook on high 1-2 hours or on low 4-6 hours.

Makes approx. 14 cups
