    # 1 can (15 ounces) chickpeas, rinsed and drained
    # 1/2 small onion, quartered and thinly sliced
    # 1/2 cucumber, peeled, seeded, and chopped
    # 7 baby carrots, chopped
    # 1 med. tomatoes, chopped
    # 2 cloves garlic, chopped
    # 3 tablespoons lemon juice
    # 2 teaspoons extra-virgin olive oil


In a large bowl, combine the chickpeas, onion, cucumber, tomatoes, garlic, lemon juice, olive oil, and salt. Toss to mix. Allow to stand at room temperature for 10 minutes for flavors to blend. Serves 2.
