    450g Chicken Breast
    1 sliced onion
    1 zucchini
    1 clove garlic
    1/2 tsp each ground ginger, cumin and paprika
    100 ml orange juice
    237 ml chicken stock
    1 tbsp plain flour
    4 dried apricots, quartered
    50g raisins
    2 tbsp tomato paste
    2 tbsp vegetable oil


Put garlic, ginger, cumin and paprika in a large bowl. Slash surface of chicken breasts or slice and add to bowl. Pour in orange juice, stir to mix. Cover and chill 4 hours. Heat oil, remove chicken from marinade (reserving liquid) brown over high heat. Adding more oil if necessary, cook onion until soft. Add sliced zucchini. Add flour stir well, cook for 1 minute. Add marinade, stock, apricots, raisins, and tomato paste, stir and bring to boil. Return chicken to pan, cover and cook at 180C (350F) Gas mark 4 for 30 - 35 mins. Serves 4.
