    heat pam cooking spray in skillet
    saute 3 T. chopped red or white onion
    add 1/8 cup chopped red peppers
    chop 1.2 cup spinach to ingredients and spread out in thin layer in skillet
    pour 1/4 cup egg white over the layer of ingredients.
    let cook for a minute or so until set
    sprinkle 2 T. feta crumbles over top of egg whites, then fold in half.
