    1 cup farro
    2 large tomatoes
    1 small cucumber
    1 clove garlic, minced
    1/2 small red onion, chopped
    2 tbsp pine nuts, toasted
    1 cup canned garbanzo beans, drained and rinsed
    3 tbsp olive oil
    juice of 1 lemon
    3/4 cup parsley, chopped
    salt and pepper


Combine 2 1/2 cups water with farro, add a dash of salt. Bring to a boil, cover and reduce heat to a simmer. Cook until tender, about 15-30 minutes. Pour off any remaining cooking water. Set farro aside to cool.

Halve tomatoes and remove seeds. Dice tomatoes and place in medium/large bowl. Peel cucumber, halve and remove seeds. Dice cucumber and add to bowl. Add garlic, onion, pine nuts, cooled farro, garbanzos, oil, lemon juice, and parsley; toss to combine. Season with salt and pepper, and toss again. Marinate at room temperature for about 20 minutes before serving.

Makes 4 servings.

Optional: if you like it with a bit of a bite, you can add 1/2 of a seeded, minced jalapeno (not included in the calorie count).
