This is a light fried rice, made with one sausage link to provide the flavor, and the tofu to boost the protein. It is best to use "old" rice that has started to get dry. Ingredients

    6 cups cooked rice
    1 package of drained extra firm tofu, diced
    one link, Chinese stye sausage, diced
    2 cups frozen mixed vegetables
    1/2 cup onion, chopped
    1.5 Tbsp Oyster sauce
    2 Tbsp Ponzu sauce


Directions

Place diced sausage, oil, onion, and tofu in a wok. Stir fry until the sausage has cooked and the tofu has some color and the onions start to brown. Add the vegetables (frozen is fine) and cook until they have thawed and heated through. Then add the rice, oyster sauce, and ponzu sauce, stir to incorpate all the ingredients.
Makes approximately 8 1 cup servings.

Optional flavors: Play and have fun!
