    2 cups - Las Palmas - Enchilada Sauce
    1 box - Jiffy - Corn Muffin Mix
    1 can - Del Monte - Sweet Corn Cream Style
    1/2 cup - Egg Product - Sunnyside Fat Free
    10 oz cooked Chicken breast boneless/skinless
    1 cup - Kraft - 2% Mexican Cheese Shredded - Separated
    1/3 cup - Sunnyside 1% milk
    1 can - Fire Roasted Diced Green Chiles 4oz can
    1 tsp - Cumin
    1/8 tsp - Cayenne pepper


Pre-Heat oven to 400

Combine 1/4 cup mexican cheese, milk, egg product, cumin, cayenne, corn, muffin mix and chiles together until just moist. Pour into a 13x9 baking dish that has been sprayed with cooking spray. Bake for 15-20, remove from oven and stick all over surface with a fork.

Mix chicken and enchilada sauce, pour evenly over muffin/corn mixture. Sprinkle the remainder of the cheese over the top. Bake for an additional 15 minutes.

Divide/cut into 8 even pieces.
