    Eggplant, fresh, 4.5 cups (medium to large size eggplant), peeled and cubed
    Trader Joe's Japanese Style Breadcrumbs, 1 cup
    Acme Reduced Fat Mild Cheddar 2% cheese, 1/2 cup
    Cumin seed, 1 tsp
    Garlic, 2 cloves, minced
    Pepper, black, 1 tsp


Peel and cube up eggplant. Spray no- stick skillet with cooking spray and saute until very soft, stirring often so it doesn't burn. Let cool for a few minutes. Process in food processor. You don't want chunks but you don't want it pureed either. Pour into large bowl and add breadcrumbs, cheese, cumin, garlic and pepper. Place in fridge to let set up and then mix and form into 4 burgers. Using a grill pan on the stove top, grill to form a nice crust on each side, about 6 minutes each. I served on a pepperidge farm deli flat with a slice of tomato, a slice of red onion and 1 tbsp hummus and a side salad. Nutritional information does not include bread, tomato or hummus.
