    7 oz. Fit and Active Whole Wheat Rotini
    4 oz. cooked chicken breast
    6 oz. grape tomatoes, roasted
    60 g. kalamata olives
    1/2 cup white wine
    1/2 T. corn starch
    1 T. lemon juice
    1 T. EVOO or truffle oil
    2 T. chopped fresh basil
    1 T. chopped fresh thyme


Boil rotini, reserving some (at least 1 c. ) of the pasta water. The grape tomatoes were halved, sprinkled with garlic powder, given a mist of cooking spray, and were slow roasted cut side up at about 350 until they look a little shriveled, but not dried out. Slice cooked meat into small bites. Chop a little fresh basil and thyme. Quarter olives. Place meat and tomatoes into large skillet with a little pasta water to reheat. Add in olives, and garlic and more pasta water. Dissolve cornstarch in a small amount of water and add to sauce along with lemon juice. Stir in pasta and 1 T. truffle oil. Lastly stir in the fresh basil and thyme.

Yields 5 1 cup servings. Sprinkle with parmesan cheese ( not incl. in calories.)
