Introduction

This is a great way to use those late summer veggies. This is a great way to use those late summer veggies.
Number of Servings: 6

Ingredients

    3 cups zucchini cut into 1/3" thick slices
    1 large onion cut into rings
    5 cups stewed tomatoes
    1 Tbsp ground oregano
    1.5 Tbsp dried parsley
    1 Tbsp salt

Directions

Preheat oven to 350 degrees.

Layer zucchini and onions in a 9X13 baking dish. Cover with stewed tomatoes. Sprinkle with parsley, oregano and salt. Bake, uncovered, for 1 hour.
