Ingredients

8 oz. uncooked spaghetti
1 lb. peeled and deveined large shrimp
1/3 c chopped fresh basil
3 T drained capers
2 T extra virgin olive oil
2 T fresh lemon juice
1/2 t salt
2 c baby spinach
Directions
Prepare pasta according to package directions. During last 3 minutes, add shrimp. Boil until shrimp are done and pasta is al dente. Drain, add all other ingredients except spinach, and toss to combine. Place 1/2 c spinach on each of 4 plates; top each serving with 1.5 c pasta mixture.
