Ingredients

    .25 c low sodium veggie broth
    .5 tbsp ginger
    2 c cooked buckwheat
    1.5 c black beans (cooked)
    2 c chopped broccoli (steamed)
    1 ear corn, roasted and corn removed from stalk
    .75 c chopped fresh pineapple
    2 tbsp chopped cilantro

Directions

-in large skillet, bring broth and ginger to simmer and leave for 2 min
-add buckwheat, beans, pineapple, broccoli, corn, tossing gently until liquid absorbed and buckwheat is warm throughout, approx 3 -5 min
-Stir in cilantro and serve
