    4 oz Dry Riggatoni
    1 tsp salt
    2 Sausage Links
    1 Tbls EVOO
    1 Bunch Broccoli Rape
    6 Cloves Garlic Chopped
    Red Pepper Flakes To Taste


Bring pot of water to boil. Add 1 tsp salt. Add Broccoli Rape and par boil for 3 minutes. Take broccoli rape out of the pot, keep on the side, but do not through out the water. Place the pasta into the same water and bring back to a boil (about 10 minutes). In a separate pan, fry the sausage links about 7 minutes and slice each link into 8 pieces. Take out of the pan and put on the side. Add 1 tbls evoo to this pan and saute 2 minutes but do not brown. Add back in the sliced sausage then add the broccoli rape and stir. Add the drained pasta when cooked. Add 1/4 cup of the pasta water. Saute 3 more minutes. Serves two. Top with 1 tbls grated cheese and extra red pepper flakes and black pepper if desired.
