This is the most popular dip in the Middle East. This is the most popular dip in the Middle East.
Number of Servings: 8


    1 can (15.5 oz) Chickpeas (Garbanzo beans) , rinsed and drained - save liquid
    1/4 c.Tahini (Sesame Seed Paste)
    1 clove Garlic
    1/2 t. Salt
    1/4 c. Lemon Juice (or to taste)


Combine all above ingredients in a food processor or blender, adding only enough of the saved liquid to meet your satisfaction (the more liquid added, the thinner the dip). Blend for 2-3 minutes to a smooth paste. Place in a small platter or shallow bowl. If preferred, sprinkle olive oil on top and garnish whith parsley sprigs and lemon wedges. May also sprinkle with paprika.
Serve with pita bread or as a dip for vegetables.
