Introduction
This is kind of like a crustless quiche but it is stuffed with veggies and sausage. Feel free to adjust the amount of ingredients. Ingredients

1/4-1/2 large onion diced
4 chicken sausage links broken into bits
1 c. mushrooms diced
1 pkg frozen spinach defrosted with water squeezed out
6-8 eggs
1 c. shredded cheese of your choice
1.2 TB olive oil
Directions
pre-heat oven to 350.
heat olive oil in a pan and add onion once it is hot. cook onion for a few moments then add sausage. cook sausage all the way through. add mushrooms and spinach and cook a few minute more.
crack eggs into a bowl and beat to combine. add salt and pepper to taste. stir in shredded cheese.
pour spinach sausage mixture into a 12" pie plate that has been sprayed with non-stick oil. pour egg and cheese mixture into pie plate. give it a quick stir. place in oven for about 30 minutes or until eggs are set.
