Introduction

We use Stevia, a natural sweetner that is very powerful.
Since we like the pie slightly tart, we only put 8 packets in. You can adjust this without changing the calorie count.

Number of Servings: 12

Ingredients

    3 cups of gooseberries, clean and de-stemed
    1 egg, large
    1/4 cup whole wheat flour
    8 packets Sweetleaf Stevia

Directions

Put the clean gooseberries in a medium size bowl.
Sprinkle the flour and Stevia on the gooseberries.
Whisk the egg.
Stir it into the bowl.
This will fill a 9-inch two crust pie.
Place the pie on a drip catcher.
Bake at 425 degrees for 15 minutes.
Lower the temperature to 350. Continue baking for 50 more minutes.
Cool. Makes 12 servings

    We no longer use Stevia. 3/4 c sugar, 2 eggs, 1 T melted butter, 3 T flour beat. Pour over gooseberries. Shirley - 7/9/20
