4 slices applewood smoked bacon, cut crosswise into 1-inch pieces
    3 1/2 cups onions, chopped
    2 garlic cloves, minced
4 cans (14.5-15.5 oz) cannellini beans, rinsed and drained
1 1/2 cups root beer (made with cane sugar)
    3 tbsp cider vinegar
    3 tbsp light molasses
    2 tbsp tomato paste
    2 tbsp dijon mustard
    1 1/2 tsp chili powder
    1 tsp kosher salt
    1 tsp ground black pepper

Preheat oven to 400. Cook bacon in a large oven-proof pot or dutch oven over medium heat until crisp, stirring occasionally. Using a slotted spoon, transfer bacon to paper towels. Add onions to drippings in pot and cook until beginning to brown, stirring often, about 8 minutes. Add garlic, stir 1 minute. Add remaining ingredients plus reserved bacon and bring to a boil. Transfer to the oven and bake, uncovered, until liquid thickens, about 30 minutes.

Makes 8 servings.
