Ingredients

    1 cup dry oatmeal
    1 can mock duck or chicken (seitan), chopped
    1.5 cup cooked brown rice
    .5 block extra firm tofu, mashed
    1 tbsp oiive oil
    1 tbsp whole wheat flour
    .25 cup ground walnuts
    .25 cup nutritional yeast
    1 medium onion, chopped
    1 large carrot, chopped
    1 can diced tomatoes (drained)
    1 tbsp garlic powder
    .5 tsp black pepper
    1 tsp dried basil
    .5 tsp dried oregano
    1 tbsp mustard
    2 tbsp barbecue or worcestershire sauce
    2 tbsp flax meal
    .25 cup corn meal
    6 tbsp ketchup (for topping)

Directions

pre-heat oven to 350 degrees
drain tomatoes, mash or chop & combine with oatmeal
chop, dice & mash other ingredients
combine all (except ketchup) in large bowl
pack into 1 greased standard or 3-4 greased mini loaf pans
spread ketchup on top
bake for 60 minutes
slice & serve with whole wheat bread
